Ingredients:

  1. Rice:

    • 2 cups of long-grain parboiled rice
  2. Tomato Base:

    • 4 large tomatoes, blended
    • 2 red bell peppers, blended
    • 1 onion, blended
    • 3 cloves of garlic, minced
    • 1 thumb-sized ginger, minced
  3. Vegetable Oil:

    • 1/2 cup of vegetable oil
  4. Protein:

    • 500g chicken, beef, or a combination
    • Optional: 1 cup of cooked or grilled shrimp, fish, or other preferred protein
  5. Seasoning:

    • 2-3 bay leaves
    • 2 teaspoons thyme
    • 2 teaspoons curry powder
    • Salt and pepper to taste
    • Bouillon cubes/powder
  6. Vegetables:

    • 1 cup of green peas
    • 1 cup of diced carrots

Procedure:

Step 1: Preparing the Rice

  1. Rinse the rice under cold water until the water runs clear.
  2. Parboil the rice by partially cooking it in boiling water for about 10 minutes.
  3. Drain the parboiled rice and set it aside.

Step 2: Preparing the Tomato Base

  1. Blend the tomatoes, red bell peppers, onion, garlic, and ginger until smooth.
  2. In a pot, heat the vegetable oil and sauté the blended mixture until the excess water evaporates, and the tomato base thickens.
  3. Season the tomato base with salt, pepper, thyme, and curry powder. Allow it to cook for an additional 10-15 minutes until the oil begins to separate from the tomato mixture.

Step 3: Cooking the Protein

  1. Season the chicken, beef, or preferred protein with salt, pepper, bouillon cubes, and any additional desired spices.
  2. In a separate pot, cook the protein until it’s browned and cooked through.
  3. If using shrimp or fish, cook or grill them separately and set aside.

Step 4: Combining Rice, Tomato Base, and Protein

  1. Add the parboiled rice to the pot with the tomato base, stirring gently to coat the rice with the rich tomato mixture.
  2. Pour in enough water to cover the rice, ensuring a slightly soupy consistency.
  3. Add the bay leaves and continue to cook on medium heat until the rice is tender, stirring occasionally.

Step 5: Adding Vegetables and Protein

  1. Mix in the cooked protein, green peas, and diced carrots.
  2. Cover the pot and let the Jollof rice simmer on low heat for an additional 10-15 minutes until the vegetables are tender and the flavors meld.

Step 6: Serving

  1. Once the rice is cooked and the flavors have melded, fluff the Jollof rice with a fork.
  2. Remove the bay leaves and discard them.
  3. Serve hot, garnished with additional vegetables or protein if desired.

Jollof rice is more than just a dish; it’s a celebration of flavors and traditions.
